Position Title: Pastry Sous Chef

Salary: $70,000 to $80,000

The Pastry Sous Chef works alongside the management team to lead and oversee our hourly pastry team through the daily high-volume production in the kitchen. This role requires a hands-on approach, where the Pastry Sous Chef will actively participate in production while also upkeeping administrative responsibilities and people management skills.
The Pastry Sous Chef is responsible for overseeing a team producing everything from mousses, cookies, quick breads, layered cakes, ice creams, viennoiserie to passed, plated and buffet styled desserts to chocolate work in a high-volume kitchen. This individual will assist in menu development, recipe testing, and working alongside the pastry team in daily production. This individual is expected to develop an understanding of ordering and inventory procedures and must have a good sense of food and labor cost, as they directly affect monthly and yearly revenue. The Pastry Sous Chef will assist in overseeing the overall running of the kitchen and maintaining cleanliness as per Company’s health and safety standards. This individual must foster team spirit to create comradery for a strong, positive, and supportive working environment. The Pastry Sous Chef will assume all responsibilities in the absence of the Executive Pastry Chef. This individual must have flexibility in scheduling.

• Minimum 3 years of Pastry experience in large scale format baking, commissary, catering or hotel preferred
• 1-2 years management experience preferred
• Good communication skills: ability to understand, follow and delegate written and verbal instruction

• Ability to motivate, educate and empower the team
• Emotional Awareness under pressure
• Being comfortable in a fast-paced, high-volume environment
• Experience with systems development and implementation
